St Mary’s Campoven
- 2kg diced beef
- 2tblsp plain flour
- Vegetables of choice such as potato, sweet potato, pumpkin, parsnip, peas, carrots, celery, onion (about 6 cups)
- 2L beef stock
- 2 x tins of Italian diced tomatoes
- 4tblsp Lancashire relish
Coat the beef in the flour and saute until brown. Add vegetables and stock, tomatoes and relish and cook for three hours over coals.
